Guava Jam Cookies
1 cup butter, softened - I recommend Plugra
2 1/2 cups all-purpose flour - I recommend King Arthur Flour
1/2 cup brown sugar
1/2 cup granulated sugar
1 teaspoon baking powder
1 teaspoon vanilla extract
1/4 cup guava jam
Preheat the oven to 350 degrees F.
Put your softened butter, brown sugar, and granulated sugar into your mixer. Cream the butter and the sugars until butter looks light and fluffy.
Beat in the egg and vanilla.
Sift your flour and baking powder into a bowl. Add it to the butter mixture and mix together.
Put a piece of parchment paper over your cookie sheet and brush it with coconut oil.
Form dough into 1 inch balls and place them on your prepared baking sheet.
Make an indentation in each cookie with your thumb or a small spoon. Fill the indentations with your guava jam.
Bake at 350 degrees F for 13 - 15 minutes. Let cool completely.
